Ingredients
Basmati rice 150 gms or one glass
Ghee 2 tbs
Cloves 2 to 3 pieces
Cinnamon half inch
Green chillies 2
Coriander leaves 1 teacup
Mint leaves 1 teacup
Potato 1
Carrot 1
Green peas 3/4 cup
Salt to taste
Method
Wash the coriander and mint leaves keep it aside till the water drains out.
Cook the basmati rice with a pinch of salt. Water proportion 1:2 (1 cup rice 2 cups of water) once cooked let it cool.
Dice the potato and carrot. Boil this along with the peas with a pinch of turmeric and salt. Drain and cool.
Make a paste of the leaves along with the green chillies.
In a hot kadhai add ghee, cloves, cinnamon. Saute this for 5 mts add the green paste and cook for about 10 mts till the raw smell of the leaves go. To this add the vegetables and the cooked rice. Add required amount of salt and mix it well till the entire rice looks green. Saute this for another 5 minutes.
Serve hot with raitha and papad.
