Here's a simple and authentic recipe you may try; Ingredients: * 2 cups coriander leaves (cilantro) * 1 cup green chilies * 1 small onion, finely chopped * 2 cloves garlic, minced * 1/2 teaspoon grated ginger * 1 tablespoon vegetable oil * Salt, to taste * 2 tablespoons tamarind paste * 1 tablespoon fish sauce (optional, but adds depth of flavor) * 1 tablespoon brown sugar * 1/4 cup water Instructions: 1. In a blender or food processor, combine coriander leaves, green chilies, onion, garlic, and ginger. Blend until smooth. 2. Heat the oil in a pan over medium heat. Add the blended mixture and sauté until it's slightly browned and fragrant, about 5 minutes. 3. Add salt, tamarind paste, fish sauce (if using), and brown sugar. Stir well. 4.
