Ingredients:-
Potato medium size 4 Carrot 2 Beans 10 Peas 1/4 cup Chow Chow 1/4 cup Cauliflower 1/4 cup ( optional) Thoor dhal 3/4 cup Grated coconut 2 tbs Red chillies 2 Jeera 2 tsp
For seasoning
Salt as per taste Cooking oil 2 tsp Mustard 1 tsp Jeera 1 tsp Broken urad dhal 1 tsp Curry leaves a few Coconut oil 1 tps optional
Method
Cut the above veggies into small cubes Preassure cook them water, salt and turmeric Pressure cook the thoor dhal seperately ( If you have a large pressure cooker, can cook the veggies n the dhal in different vessals in the same cooker) Grind the coconut, jeera n Red chillies n make it into a paste In a kadai add oil, mustard , jeera n borken urad dhal Pour the cooked veggies and the dhal . Mix it well and the add the coconut paste. Add required amount of salt and curry leaves. Pour some water to make it into semi solid state. Bring it to a boil and add a few drops of coconut oil. Keep stirring the Kootu while its boiling. Cook for about 5 mts. Serve it hot rice/ rotis/ parathas
